Mammi Tasting

Finnish rye pudding, or Mammi is a tradition Easter dessert in Finland. I’m not really sure how to describe it without sounding insulting. The thing you have to know is that it’s not that bad. The problem is that it looks pretty bad and the ingredient list isn’t something that sounds very appealing. It’s primarily rye flour, syrup, spices and dried Seville orange zest. It doesn’t appear to be baked at all, but is instead a very dark brown blob of goo, almost like eating a bitter cake batter. Again, while this is an accurate description, it’s not really a representation of how it tastes.

From what I can tell, from the internet as well as the selection of Mammi I was given, it’s most common to have Mammi with custard or something sweet and creamy. Of the three that we (Allison, myself and two Finnish friends) tasted, two of them came with some kind of sweet cream, one of them was on its own. while I appreciated tasting it on its own, it’s not something I would do again or recommend. However tasting it on it’s own gives me the opportunity to tell you how Mammi tastes without anything added.

The flavour of Mammi is fairly bitter, almost licorice like. I might have been projecting as most of the time anyone Finnish seems to offer me something it has licorice. However in this case I think the astringent flavour came from the Seville orange zest. For those unaware, Seville oranges are super bitter and most often used to make jam, when mixed with lots of sugar. Mammi on its own however doesn’t seem like there’s much or any sugar added. The texture is actually much better than you might think. It’s a little gritty, but actually kind of smooth. There’s also an aftertaste of the rye, so at least the gritty texture makes sense.

As for the toppings, apparently the tradition is to simply add a vanilla custard. One of the Mammis we had was just that, and it was by far the best one. The vanilla custard sweetens and smooths out the astringent flavour of the Seville orange a bit, but not so much as you still can’t taste it. It’s not like this custard covers everything up, instead it just makes it a bit more palatable.

The other Mammi we had was a little less conventional, in panna cotta form. I would say that this was far less successful than the classic vanilla cream, but I appreciated that the Finnish dessert manufacturers were willing to play with their classic Easter dessert a bit. I’ve been told there are a few other methods/versions of Mammi out there as well.

I would suggest that you try Mammi if you have the means. I’m pretty sure it’s an acquired taste and works much better if you grow up with it, but it was at the very least very unique and interesting.

Big Change For One Review

 

One thing that happens on candycritic.org from time to time is the addition of an international version of a particular treat. This basically means that I've discovered the same treat, but from a different place than the first place that I tried it. Most often the first place I try it is in Canada, but not always. I've only recently started to review the same treats from different places, and I've found that some of them can be very different (some are identical too). The thing that happens when I post these reviews is I have to go back into my old reviews and clarify where I bought the original. Sometimes the first time I review something is also not the original too.

Easter Time Is Here

 

This latest Easter review is an amazing example of classic candies that have taken me way too long to review. This is particularly interesting because I've actually reviewed many other versions of this treat, but not the original. Without spoiling too much, I feel like there's a reason I haven't reviewed these and it has something to do with how I feel about bland marshmallows. I'm sure there are some people out there however who love these, so feel free to complain in the comments.

Peeps 5 Ways

 I just ate Peeps prepared 5 different ways, and I'm blown away at the results. It's amazing how different the results were each and every way I prepared them. I should note that I'm not a huge fan of Peeps, but maybe if they offered them with cooking or cooling instructions I might like them a little more. Here's the results and how I felt:

Regular - You can read all my Peeps reviews, but one thing you'll notice about many of them is that I find the flavour is just way too bland. The only Peeps I regularly enjoy are the variety that are flavoured, particularly with chocolate. This was no exception.

Refrigerated - This was probably the most surprising of all the Peeps preparations. I'm finding that most candy items that I put in a refrigerator just get cold. There are a few chocolate bar exceptions, but more often than not I'm very disappointed with refrigerated candy. This was one of the few exceptions where the texture was totally changed for the better, and that's important because I'm not a huge fan of marshmallow's texture.

Frozen - This was also a surprise, but I don't think it went as well as the refrigerated. I would say that this is an improvement, but it was almost so weird that I'm not sure if I really liked it or not. The frozen centre was fun, but not enough to really make me fall in love with these.

Microwaved - The greatest part about this preparation is how the candy coating got hard. The inside of the marshmallow also got very gooey, but the powder coating turned into a hard candy coating that I really liked. I would also suggest that anyone with some Peeps and a microwave throw a few in there just for fun, as watching them expand is really cool.

Baked - This was not surprising, but it was by far my favourite. I don't really like marshmallows, unless they're roasted. This totally worked because it gave me the nice toasted marshmallow flavour and included the hard candy shell. One day I hope to have a box of Peeps on a camping trip and I may attempt to make these into s'mores.

Easter Reviews Are Coming In

While writing this review a thought crossed my mind. What's the best holiday for candy? I'm talking about the best quality candies and not the most candies. I would also have to add that the candies have to be unique to that holiday, so that means that a Kit Kat bar cannot count for Halloween. The more I thought about it the more I think I'm leaning towards Easter. While the selection of Easter treats is more limited than many holidays, the fact that high quality chocolate is a big ingredient plays to its favour.

Bunny Time!!!

For my last Easter review I decided to go with this chocolate Easter Bunny Kit Kat treat. The one thing I've noticed over the years is an increase in brand name Easter treats. Not that Easter treats didn't have popular brand names when I was a kid, but today I'm noticing more every day brands are coming out with Easter treats. So now you're seeing Butterfinger eggs, Crunchy mini eggs, and Kit Kat bunnies. I'm not sure how I feel about that, particularly since it appears that the classic Easter treats are getting less shelf space.

The Egg Shape Works!

I’ve always been intrigued by the Easter Egg. I don’t really understand how it’s come about, even though I’ve done some research on the subject. Having said that, I feel like the egg is a really good way to deliver filled chocolates. I’m not as big a fan of just hollow chocolate eggs, but as a means to deliver filling, I feel like chocolate eggs are very good. Because of the oblong shape each bite is a little different from the next. On the narrower end of an egg you get more chocolate to filling, but around the center it’s mostly filling and less chocolate. It allows for an interesting balancing act between chocolate and filling. I also feel like the egg is a comfortable shape to hold. This is more so when you’re talking about larger filled egg treats. While I’ll never understand the origins of chocolate eggs, I’m always going to enjoy eating them.
